Slightly modified recipe for biscuits that were posted to the Australian and New Zealand Army Corps (ANZAC) during WWI.
Ingredients
Instructions
-
Heat oven to 170 deg celsius, with a rack in the centre of the oven. Line a baking tray with baking paper.
-
Heat the butter until melted, in a fairly large pot on the stove. Add the golden syrup and vanilla essence and mix well.
-
Add ingredients in the following order, stirring well between additions: sugar, rolled oats, coconut, flour, baking soda.
-
For large biscuits, shape level measuring spoons of mixture. For smaller biscuits, roll smaller balls and flatten them.
-
Allow space between biscuits on the tray for baking, or else the biscuits may form together.
-
Bake biscuits for 15 minutes, or until evenly golden brown. Cooking for slightly longer will result in harder, crunchier biscuits. For softer, chewy biscuits, cook slightly less.
-
Cool on a rack until cold and firm, then store in airtight containers.
