Anzac BiscuitsAnzac Biscuits

Slightly modified recipe for biscuits that were posted to the Australian and New Zealand Army Corps (ANZAC) during WWI.

  1. Heat oven to 170 deg celsius, with a rack in the centre of the oven. Line a baking tray with baking paper.

  2. Heat the butter until melted, in a fairly large pot on the stove. Add the golden syrup and vanilla essence and mix well.

  3. Add ingredients in the following order, stirring well between additions: sugar, rolled oats, coconut, flour, baking soda.

  4. For large biscuits, shape level measuring spoons of mixture. For smaller biscuits, roll smaller balls and flatten them.

  5. Allow space between biscuits on the tray for baking, or else the biscuits may form together.

  6. Bake biscuits for 15 minutes, or until evenly golden brown. Cooking for slightly longer will result in harder, crunchier biscuits. For softer, chewy biscuits, cook slightly less.

  7. Cool on a rack until cold and firm, then store in airtight containers.
